3 Easy Spiked Hot Chocolate Cocktail Recipes

One common winter occurrence is wanting to stay inside drinking hot cocoa due to the bitter cold. Yet some nights (and afternoons too) you may want to have a drink. Well, you can do both! Here are three easy hot chocolate cocktail recipes so you can get your booze fix and stay warm at the same time. I used common ingredients for all three recipes so you could recreate these without having to run out to your local liquor store. (I saw a lot of spiked hot cocoa recipes that called for things like peppermint schnapps, which I'm sure are nice, but most of us don't have that laying around the house.)

A few tips...
  • For those of you who are not experiencing winter right now and think a hot drink sounds like a nightmare (or for my fellow Puerto Ricans who are experiencing 80°F + weather but will still be celebrating the holidays until mid January), try these recipes frozen or iced. Just add a 1.5 cup of ice and throw the mix in the blender. It's how I recycled the leftovers from this and they tasted great!
  • A 1.5 oz is about a shot glass worth of liqueur. No need to take out the measuring spoons. Feel free to add more alcohol to make your cocoa stronger.

Spiced Bailey's & Rum Hot Chocolate

You'll Need:
6 oz of milk, soy, almond milk or your favorite milk substitute
1 packet of hot chocolate mix or 3/4 oz hot cocoa powder
1.5 oz Bailey's Irish Cream Liqueur
1.5 oz Spiced Rum (I used Captain Morgan's Original Spice)
Spices. Ginger, nutmeg, cinnamon
Marshmallows (optional, for garnish)

Instructions
01. Prepare hot chocolate like you normally would. Combine the cocoa powder and milk in a small saucepan (you can also make it in the microwave if that's what you normally do).

02. Lower the heat to a simmer and add the Bailey's and spiced rum. If you only have regular rum or if you have spiced rum and want your drink to have even more kick, add ginger, nutmeg, and cinnamon to taste. I used about 1/4 of a teaspoon. Stir it all together.

03. Serve on your favorite cup or mug. Top off with marshmallows and a sprinkle of cinnamon.

Note: This cocktail would also work well with RumChata instead of Bailey's.

Peppermint & Bailey's Hot Chocolate

You'll Need:
6 oz of milk, soy, almond milk or your favorite milk substitute
1 packet of hot chocolate mix or 3/4 oz hot cocoa powder
3 oz Bailey's Irish Cream Liqueur
2 candy canes or peppermint candy
Marshmallows (optional, for garnish)
Peppermint chocolates such as Hershey's Kisses Candy Cane (optional, for garnish)

Instructions
01. Prepare hot chocolate like you normally would. Combine the cocoa powder and milk in a small saucepan (you can also make it in the microwave if that's what you normally do).

02. Lower the heat to a simmer and add the Bailey's Irish Cream.

03. Crush one candy cane (or peppermint candies) and add it to the saucepan so your hot chocolate gets infused with peppermint flavor. (You don't have to spend a lot of effort crushing your candy cane, it melts pretty quickly. You could even throw it whole in there.)

04. Serve on your favorite cup or mug. Top off with marshmallows and peppermint candy.

Note: This recipe also tastes amazing with white hot chocolate mix.

Nutella & Rum Double Hot Chocolate

You'll Need:
6 oz of milk, soy, almond milk or your favorite milk substitute
1 packet of hot chocolate mix or 3/4 oz hot cocoa powder
1 tbsp Nutella or chocolate spread (substitutable with a bar of chocolate)
3 oz rum (I used Captain Morgan's Original Spice)
Marshmallows & Chocolate Chips (optional, for garnish)

Instructions
01. Prepare hot chocolate like you normally would. Combine the cocoa powder and milk in a small saucepan (you can also make it in the microwave if that's what you normally do).

02. Lower the heat to a simmer and add the rum.

03. Before serving, add a scoop of Nutella or chocolate spread to the bottom of your mug. Top off with marshmallows and chocolate chips.

Note: This recipe would also go well with bourbon instead of rum. I'd love to make it with Jim Dean Vanilla Bourbon in the future.
